The name

Atliz is Hebrew for butcher shop. Ours has nothing from an animal in it.

Dry soy chunks go in with the beans, take on the pot, and hold their shape through the night — so it tastes like the cholent a family already makes, without the fleishig status that comes with meat.

The Shabbat cycle

One long, low cook

Before candle-lighting

Into the pot dry

One ounce per serving, straight in with the beans. No thawing, no drip.

Friday night

It takes on the pot

Hydrates in the cooking liquid and picks up the onion and paprika around it.

16–18 hours

Low heat, untouched

Holds its shape overnight rather than dissolving into the barley.

Shabbat morning

Served pareve

The pot carries no meat status — it works at any table in the house.

Dry-goods aisle with an empty shelf facing at eye level.
The placement

Beside the beans, not in the freezer

Ambient dry goods. No freezer slot, no thaw damage, no end-of-life markdowns.

The buyer's case

Why it earns the facing

Repeat rate

Fifty-two occasions a year

Cholent is a weekly ritual, not a holiday item. The calendar never stops.

Logistics

No cold chain, no shrink

Ships, stores and merchandises like a dry grocery SKU.

Kitchen constraint

Pareve solves a real problem

One pot that works at a dairy kiddush, a mixed table and a fleishig meal.

The panel

A two-word ingredient list
